I use parisbytrain.com There are 16 metro lines and three rer. Remember that there are 300 stations. All trains start operating at about 5:30 and all should be in operation before 6:00 You might want to check with your nearest station to get exact figures. I like to use the new line 14. Has many new things, like practically no stairs all lifts and escalators and is much faster . Goes from the 12th and 13th to S Lazare in minutes. Also has - first time in the world suicide and getting pushed to the rail protection.

You can check online, http://www.ratp.fr/itineraires/en/ratp/recherche-avancee for instance, but if you google Trains Paris Times you will get other sites.

The lines I checked out seemed to start between 5 AM and 6 AM, but you will get results for earlier with night buses. (Set the site to 'trains' to avoid getting (night) buses.)
